Pesto Potato Soup
Ingredients: 4-5 slices of bacon, 500 g potatoes, 400 g onion, 2 tablespoons butter, 650 ml vegetable broth (bones, chicken), 600 ml milk, 100 g pasta (approximately), 120 ml whipped cream, fresh parsley, chopped, salt, pepper, grated parmesan for garnish, garlic bread with butter. PESTO SAUCE: 1 handful of parsley, 2 cloves of garlic, 1 good handful of pine nuts, 2 large tablespoons of fresh basil, chopped, 50 g grated parmesan, pepper, 100 ml oil.
To prepare this delicious dish, we start by making the pesto sauce. In a blender, we combine all the necessary ingredients: fresh basil, pine nuts, grated parmesan, garlic, olive oil, and salt. We blend on high speed for about two minutes, or until we get a smooth and homogeneous paste. This sauce will give our dish an intense flavor and a fresh taste.
Meanwhile, we take care of the other ingredients. We take a few slices of bacon and cut them into small pieces. We place them in a hot pan and fry them until crispy, releasing their delicious aroma. Once the bacon is ready, we cut the potatoes into small cubes and the onion into tiny squares. We add these vegetables over the fried bacon and mix well, continuing to cook for 10 minutes. It is important to stir constantly to prevent sticking to the bottom of the pan. If we notice that the mixture starts to stick, we can add a little chicken broth to keep it moist and flavorful.
After 10 minutes, it is time to add the chicken broth, which can be made from vegetables and bones, and the milk. We let everything simmer for 10 minutes, so the flavors combine perfectly. Once the broth starts to boil, we add the pasta, mixing well to incorporate it into the composition. We boil everything for another 8-10 minutes, or until the pasta is al dente and absorbs the juicy flavors of the broth.
In the last minutes of cooking, we add the heavy cream, which will provide extra creaminess to the dish. We gently mix and let it simmer for 2-3 minutes, after which we add the previously prepared pesto sauce and the freshly chopped parsley for a touch of freshness and color.
After we finish cooking, we take the pot off the heat and prepare to serve. We ladle the soup into deep bowls, and generously sprinkle grated cheese on top, which will melt and add a savory taste. We can also serve the dish alongside toasted bread slices, perfect for accompanying each spoonful of this soup that looks more like a hearty meal than just a simple soup. It is a comforting dish, perfect for chilly evenings, full of flavors and textures that will surely delight the taste buds!
