Pork offal soup with horseradish
Ingredients: 800 g offal, meaning heart, tongue, pork knuckle (nail) 1 bay leaf 1 teaspoon ground coriander 1 teaspoon mustard seeds 1 teaspoon whole pepper salt 2 cubes meat broth 2 carrots 1 bunch parsley leaves 1 root horseradish 500 g sour cream 3 egg yolks
We carefully clean the heart of any remaining blood clots, cut the larger arteries, and ensure that the tongue is well washed. The pig's trotter must also be cleaned carefully. All these ingredients are boiled, preferably in a pressure cooker, with about 4 liters of water. In the water where we add the ingredients, we put a teaspoon of salt, a teaspoon of mustard seeds, a teaspoon of ground coriander, a bay leaf, a teaspoon of peppercorns, and the two bouillon cubes for extra flavor. We let everything boil in the pressure cooker for about 40 minutes, starting to count from when it starts boiling.
After the boiling time has expired, we carefully remove the pieces from the boiling broth. The bones from the pig's trotter are removed, and the meat is cut into thin strips. The tongue is also cleaned of its skin, and then cut into similar strips. We proceed the same way with the heart, making sure that all the ingredients are prepared to be added to the soup. The remaining broth is strained into another pot, and then we put it back on the heat, adding the sliced carrots. When the carrots are half cooked, we can also add the strips of offal to allow them to boil together and blend the flavors. It is important to check if more salt is needed and to adjust the taste according to preferences.
Meanwhile, we prepare a mixture of egg yolks with sour cream, taking care to homogenize them well. We gradually add a little of the hot soup to dilute the mixture, after which we pour everything into the soup pot. This step will give a creamy texture and rich flavor to the dish. The soup is sprinkled with chopped fresh parsley, and then we let it come to a boil, so the flavors blend perfectly.
When serving, each plate will receive a generous portion of hot soup, and freshly grated horseradish will be added on top, adding a spicy and refreshing note. It is allowed to sit for a few moments for the flavors to combine, then it is gently stirred before being enjoyed. It is an ideal dish for cool days, full of nutrients and with a special taste, perfect for bringing family and friends to the table. It is served hot, alongside a slice of fresh bread, to complete the culinary experience.
