Semolina Soup
To prepare this delicious soup, start by choosing the ingredients you like the most, keeping in mind that the soup can be customized according to everyone's preferences. Once you have gathered the desired vegetables, meat, or fish, cut them into suitable pieces. Then, place them in a large pot, adding enough water to cover the ingredients. Add onion, carrots, celery, and if you wish, some herbs like bay leaves or parsley. These will infuse into the soup, bringing an extra flavor.
After the ingredients are added, place the pot over medium heat. When the soup starts to boil, reduce the flame to low and let it simmer, covering the pot with a lid. It is important to remember to check occasionally, stirring gently to prevent the ingredients from sticking to the bottom of the pot. After about 30 minutes, the soup will be ready to be strained. Use a colander with larger holes to separate the vegetables and meat, then pass the liquid through a fine strainer to obtain a clear and flavorful soup.
Once the soup is filtered, put it back on the heat, bringing it to a boiling point. Now, it is time to add the semolina. Sprinkle the semolina in rain, stirring constantly with a wooden spoon to avoid lumps. Continue stirring, let the soup boil for about 5 minutes. It is essential to stir from time to time, so the semolina integrates perfectly into the liquid, providing a creamy and consistent texture.
After 5 minutes, turn off the heat and let the soup cool for 5 minutes. This approach will help the semolina absorb the soup's flavor, making it even more savory. Finally, serve the soup in deep bowls, adding a generous portion of grated Parmesan on top. This will add a salty note and an intense flavor, perfectly complementing the dish.
It is important not to add salt or other spices, as the soup should already be well-seasoned, and the Parmesan will bring additional flavor. The final consistency should be similar to that of baby food, meaning creamy and slightly bound. This simple yet flavorful soup will surely be appreciated by all who savor it!
