Fish Meatball Soup
Ingredients: 350 g fish fillet (I used pangasius) but any other fish fillet can be successfully used, one egg, salt, pepper, 3 onions, 4 potatoes, 2 carrots, 2 bell peppers, tomato juice or broth, dill, parsley, lovage, borscht.
To prepare a delicious fish soup with meatballs, we start by boiling 3 liters of water in a large pot, adding a few drops of oil to prevent foam. While the water reaches the boiling point, we focus on the vegetables. We wash and finely chop the carrots, celery, bell pepper, and onion, making sure to get uniformly sized pieces for even cooking.
Once the water has started to boil, we add the chopped vegetables to the pot. We let it boil over medium heat, stirring occasionally, to release the flavors and create a tasty base for the soup. In the meantime, we take care of the meatballs. We take fresh fish fillet, which we pass through a meat grinder or blend until it becomes a fine paste. In this fish paste, we add a fresh egg, a few sprigs of finely chopped dill and parsley, as well as salt and pepper to taste. We mix everything well to obtain a homogeneous composition.
From this mixture, we form small balls, being careful not to make them too large, so they cook well in the soup. Returning to the boiling vegetables, we ensure they are almost cooked. At this point, we add salt to taste and pour in the tomato juice or broth, which will give the soup a vibrant color and rich flavor. Once the juice has been incorporated, we carefully start adding the meatballs, letting them boil in the soup for about 10-15 minutes.
After the meatballs are cooked, we add the borscht, which will give the soup that specific note of acidity and freshness. We continue to let the soup simmer for another 10 minutes, stirring occasionally. Before serving, we add finely chopped parsley and lovage at the end, which will intensify the aroma and bring a touch of freshness to the dish. The fish soup with meatballs is now ready to be served. We can accompany it with a slice of lemon and a spoonful of sour cream for an extra flavor boost. Enjoy every spoonful of this comforting delicacy, perfect for cool days!
