Beetroot Cream Soup

 Ingredients: 1 small beetroot, 2 carrots, 2 potatoes, 1 bell pepper (kapia), 1 onion, fresh dill or parsley, 3-4 tablespoons of oil, 1 egg, 1 cup of whey, 2 cups of water, salt, sour cream, and salty cheese for serving.

To prepare a delicious and nutritious cream soup, the first step is to take care of the fresh vegetables. We start by finely chopping a medium onion, which we will sauté in a pan with hot oil. It is important that the oil is not too hot, so the onion sautés evenly, becoming transparent and sweet, without burning. Once the onion turns a light brick color, we add a bell pepper, diced, and a medium carrot, grated or cut into thin rounds. These vegetables will bring a special flavor and pleasant texture to the soup.

We continue with the beetroot, whether we choose to grate it or slice it thinly, it will add a vibrant color and a sweet taste. Then, we add a medium potato, diced, which will give the soup some consistency. We mix all the vegetables together and let them sauté for a few minutes, to combine the flavors. After the vegetables have softened slightly, we add water until they are completely covered, then cover the pan and let it simmer on low heat.

It is important for the vegetables to simmer slowly, to retain all their nutrients and flavors. After about 20-30 minutes, when the vegetables are cooked and tender, we move on to the next step. In a separate bowl, we beat a fresh egg and mix it with the whey, which will add a specific tangy flavor to the soup. If we don't have whey on hand, we can use milk, but the taste will be different, less tangy. We pour the egg and whey mixture into the soup, letting it boil for a few minutes until the soup comes to a boil.

Finally, we add salt to taste, to enhance the flavors. Using a blender, we mix the soup until we achieve a creamy consistency, without vegetable chunks, and for an extra flavor boost, we add finely chopped fresh herbs, such as parsley or dill. This cream soup is perfect for a comforting dinner or to be served as an appetizer. Enjoy your meal!
