Baked Potatoes with Parmesan

 Ingredients: 1.5 kg of potatoes cut in half or quarters if they are large, 5 tablespoons of olive oil, 2 teaspoons of flour, 100 g of grated Parmesan, a handful of chopped parsley leaves, 4 leaves of fresh or dried rosemary (preferably), salt and pepper.

Oven-baked potatoes are a delicious and versatile side dish, perfect for accompanying a variety of meals. To begin, we prepare the necessary ingredients. We will use suitable potatoes, preferably new or 'Yukon Gold' type, which have a creamy texture and delicious taste. Start by peeling the potatoes and cutting them into cubes of about 2-3 cm, so they cook evenly.

In a large pot, add the cut potatoes and cover them with cold water. Sprinkle a teaspoon of salt in the water to flavor the potatoes. Place the pot over medium heat and let it boil for five minutes. This step will help soften the potatoes, ensuring that they bake evenly and become crispy later. After five minutes, drain the potatoes in a colander and let them cool slightly.

While the potatoes are draining, we prepare the spice mixture. In a large bowl, combine the flour with grated Parmesan cheese, freshly chopped parsley, dried rosemary, a pinch of salt, and freshly ground pepper. These ingredients will add not only flavor but also a delicious crust to the potatoes. Mix well so that all ingredients combine perfectly.

Once the potatoes have cooled slightly, add them to the bowl with the flour and spice mixture. Using a spatula or your hands, gently toss to ensure that each potato cube is well coated with this flavorful mixture.

Preheat the oven to 200 degrees Celsius. Meanwhile, in a baking tray, add a little olive oil and heat it over medium heat. Once the oil is hot, add the flour and spice-coated potatoes, spreading them evenly in the tray.

Place the tray in the oven and let the potatoes bake for 40 minutes. Halfway through, it is recommended to turn the potatoes with a spatula to ensure they brown evenly on all sides. You will enjoy an enticing aroma that will fill the kitchen as they bake.

When the potatoes turn golden and crispy, remove the tray from the oven and let them cool for a few minutes. Serve them immediately, alongside your favorite sauces or simply drizzle with a little olive oil and sprinkle with a little salt on top. These delicious potatoes will surely be a hit at any meal!
