Spring Stew
Ingredients: 500g of beef (pork) 1 tablespoon of seasoning 2 tablespoons of oil 250g of green asparagus 250g of white asparagus You can use only one type of asparagus 1 onion 1 carrot 8-9 small tomatoes Salt, pepper, coriander, cumin, paprika, garlic A few cups of water
White asparagus, a delicate and refined vegetable, is peeled using a peeler, taking care to remove only the outer skin, thus preserving its smooth texture. After peeling the white asparagus, we cut it into pieces about 2 fingers long. Green asparagus, known for its distinct flavor, is washed well under a jet of cold water and cut into the same size as the white asparagus, thus creating a contrast of colors and flavors in our dish.
In a large pot, we place finely chopped meat, add olive oil, which will add a rich taste, delicate for an extra flavor boost, and our favorite spices (in this recipe, I chose not to use salt, but everyone can adjust the taste to their preferences). We add enough water to cover the meat and let it boil over medium heat, stirring occasionally, until the meat is almost tender.
Meanwhile, we slice the carrot into thin rounds so it cooks evenly and releases its natural sweetness. After about 10 minutes of boiling the meat, we add the carrot to the hot broth. Then, we add coarsely chopped onion, which will add flavor and sweetness to the dish. Next comes the white and green asparagus, which will bring a crunchy texture and vibrant color. Finally, we add chopped tomatoes, which will provide a fresh taste and pleasant acidity.
We check the seasoning, gently stir everything, and cover the pot with a lid to allow the flavors to meld. We let it cook until the asparagus is tender (we check with the tip of a knife to ensure it is soft) and the sauce has reduced significantly, thickening into a true delicacy.
To serve this dish, it is ideal to accompany it with simple sides, such as boiled potatoes, creamy mashed potatoes, or fluffy rice, which will absorb the rich flavors of the sauce. Every bite will be an explosion of tastes and textures, and the combination of meat, vegetables, and sauce will turn the meal into a memorable feast. Enjoy your meal!
