Dietary Croquettes
With this recipe, I have concluded the series dedicated to various diets and food intolerances. Although many do not pay attention to them, and those who are interested continue to ask for dietary recipes, which abound in the 'rc Cookbook'. However, whether they cannot find them or do not stick to them, it is clear that the need for healthy recipes remains high. I am not passionate about preaching in the desert, especially since diets and regimes do not represent a field that captivates me.
These croquettes are an excellent solution, as they contain no fats or gluten. The advantage is that they can be made from any leftover boiled meat in the fridge, whether it is from unsuccessful soup leftovers or meat from a roast that can no longer be served elegantly but is not worth throwing away. I used leftover chicken soup, which has all the necessary ingredients. I added a tablespoon of coarse rice flour, which did not pass the fine sieve test, and I kept it just in case.
I also added fresh herbs, salt, and pepper to enhance the flavor, and then mixed well. I left the mixture in the fridge until the next day, although just one or two hours is sufficient. The next day, I took the mixture out and whipped an egg white well, which I carefully incorporated, mixing slowly from the bottom up to achieve a homogeneous texture. Those who can afford it can add the whole egg without whipping the white separately, but with the whipped white, the croquettes turn out more tender and fluffy.
I then formed the croquettes; they can be any shape you want, so you can visually impress your guests with simple yet refined dishes. I placed the croquettes on a lightly oiled baking paper and baked them for a quarter of an hour in a preheated oven at 200 degrees. How you serve them depends on your preferences. Considering we are talking about a diet, I encourage you to look for a healthy side dish.
Personally, I like to drizzle the croquettes with a little lemon juice to add a touch of acidity and freshness. Others prefer a few drops of olive oil, as the dish may seem dull without oil. Lemon juice offers the same benefits, bringing a fresh note. Well, a diet is a diet, but we should not completely deprive ourselves of culinary pleasures. It is important to enjoy food, even when we are on the verge of losing weight. These croquettes are an excellent choice to satisfy our craving for something tasty without loading us with fats.
