Spinach I
Ingredients: We need 450 grams of spinach, 2 cloves of garlic, 2-3 tablespoons of flour, salt to taste, 3-4 tablespoons of oil, milk as needed.
Spinach is a versatile and delicious ingredient that adds a touch of freshness and nutrients to any dish. We start by cleaning the fresh spinach, making sure to remove any wilted leaves or spots. Then, we put a pot of water to boil, adding a pinch of salt to enhance the flavor. When the water starts to boil, we add the spinach and let it boil for about 2-3 minutes, just until the leaves become tender and change to a vibrant green color. Once boiled, we drain the spinach in a colander and let it cool slightly before chopping it finely. It is important not to let the spinach cool too much, as we want it to retain its texture and flavor.
In a saucepan, we try to achieve a creamy base for the sauce. We add a few tablespoons of olive oil, which will not only enhance the taste but also help prepare a delicious sauce. We sprinkle the wheat flour over the hot oil, constantly stirring with a wooden spatula. This combination needs to be cooked on low heat for a minute, to cook the flour without burning it. The next step is to gradually add the chopped spinach, continuously mixing to integrate it well into the flour and oil.
To achieve the desired consistency, we start pouring in the milk, about 50-75 ml at first, stirring continuously. We continue to add milk until the sauce becomes a softer paste, but not too liquid. Now is the time to add the crushed garlic, which will add a flavorful note and an unmistakable taste to the dish. We let the mixture boil for a few moments, stirring occasionally to prevent sticking.
When the sauce has reached the desired consistency, we can serve it alongside various side dishes. It is delicious with crispy fried potatoes, which add a pleasant contrast, or alongside juicy schnitzels, which perfectly blend the flavors. It also pairs wonderfully with fried eggs, and for those who prefer a simpler dish, a slice of toasted bread spread with a fried egg will be the perfect choice. This recipe is not only tasty but also very nutritious, being an excellent way to incorporate vegetables into the daily diet.
