Almond Soufflé

Ingredients: For the soufflé: - 200 ml milk - 80 g flour 000, freshly sifted - 40 g butter at room temperature (soft but not melted), cut into pieces - 80 g blanched almonds, finely ground - 40 g sugar - 4 egg yolks - 6 egg whites - 1 packet of vanilla sugar - finely ground sea salt - 30 g butter for greasing the soufflé dishes - 3 tablespoons of sugar for dusting the soufflé dishes. For decoration: - 30 g almond flakes - 1 tablespoon of powdered sugar (optional)

To prepare a delicious almond soufflé, start by bringing a pot of milk, sugar, vanilla sugar, butter, and a pinch of salt to a simmer over low heat. It is essential to continuously stir with a wooden spoon to prevent the ingredients from sticking to the bottom of the pot. When the mixture begins to steam and approaches boiling point, remove the pot from the heat. At this moment, add the flour 'all at once', making sure to mix quickly. Using the same wooden spoon, continue to stir until the mixture easily pulls away from the sides of the pot and forms a homogeneous dough ball. Transfer the dough to a bowl and let it cool for 15 minutes at room temperature.

Meanwhile, prepare the soufflé dishes. You can use 8 dishes with an outer diameter of 9 cm and an inner diameter of 7.5 cm, with a height of 5 cm. Grease each dish with butter and then coat it with sugar, so the soufflé will easily come out after baking. This step is crucial for achieving a perfect soufflé with an airy texture.

Once the dough has cooled, add the egg yolks one at a time, ensuring that each yolk is well incorporated before adding the next. You can use an electric mixer with spiral whisks to facilitate this process. After the yolks are well integrated, add the finely ground almonds and continue mixing the composition for 20 seconds to achieve a uniform and smooth consistency.

Separately, beat the egg whites until you achieve a firm foam. It is essential that the egg whites are well beaten to give the soufflé a light and airy texture. Once the egg whites are ready, carefully fold them into the dough mixture, being careful not to lose the incorporated air.

Divide the resulting mixture among the prepared dishes, being careful not to exceed 3/4 of the capacity. On the surface, sprinkle almond flakes for an attractive appearance and a crunchy texture. Preheat the oven to 180 degrees Celsius and bake the soufflés for 15 to 20 minutes. The baking time may vary depending on your oven's characteristics, so it is recommended to watch them closely.

The soufflés are ready when they become golden and fluffy. Serve them immediately after baking, as they begin to lose height in about a minute. For an extra touch of flavor, you can sprinkle powdered sugar on top before serving, adding a sweet and elegant note. This almond soufflé is perfect as a dessert, offering a delicious combination of flavors and textures that will delight any sweet lover.
