Ingredients: 360g ground walnuts, 16g powdered sugar, 8 egg whites, 48g flour, 480g granulated sugar, a few drops of almond essence.
Pralines are a delicacy that delights with their crunchy texture and intense nut flavor. Preparing them requires a bit of patience, but the final result is worth all the effort. To start, we need finely ground walnut, which will form the base of these aromatic cookies. In a pot, we combine the walnut with granulated sugar. It is important for the mixture to be homogeneous, so we can use a spatula or a wooden spoon to mix the two ingredients. Then, we add the egg white, which should not be beaten beforehand, to keep the moisture and allow the pralines to maintain their characteristic texture.
Once we have obtained a homogeneous composition, the pot is placed over medium heat, being careful to stir constantly. The goal is for the sugar to completely melt, and the mixture to become warm, almost hot. This will help activate the ingredients and give the cookies a perfect texture. After the mixture is warm, we let it cool, then cover it and put it in the fridge overnight. This step is essential as it allows the flavors to develop and the composition to thicken.
The next day, we take the mixture out of the fridge and add almond essence, which will add an enticing aromatic note. Then, we incorporate the flour, mixing it well to achieve a uniform composition. It is important not to leave lumps, as they could affect the final texture of the pralines. After we finish mixing, we prepare to form the cookies. Using a teaspoon, we take portions of the mixture and place them on a baking tray lined with parchment paper, leaving enough space between them, as they will rise slightly during baking.
To achieve that specific shiny crust of pralines, each mound must be generously dusted with powdered sugar. This is not just a decorative step, but also an essential one for the final texture. After we finish dusting all the mounds, we preheat the oven to a temperature of about 140-160 degrees Celsius. We place the tray in the oven and bake the pralines for 15-20 minutes. It is important to pay attention to their coloring; they should become shiny and show small cracks on the surface. Once they are ready, we let them cool on a rack, and then we can enjoy these aromatic delights, perfect to be served alongside a coffee or a fragrant tea. Savor every bite!
