Zebra Cake

 Ingredients: 150 g flour, 220 g sugar, 150 g corn starch or potato flour (fecola di patate), 7 tablespoons milk, 7 tablespoons oil, 4 eggs, grated rind of one lemon, a pinch of salt, one packet of baking powder (16 g), vanilla essence

To prepare this delicious recipe, we start by making sure we have all the necessary ingredients on hand. You will need 4 egg yolks, 200 g of sugar, vanilla, the grated zest of one lemon, 250 g of flour, 50 g of cornstarch, 10 g of baking powder, 120 ml of oil, 200 ml of milk, 4 egg whites, and 2 tablespoons of cocoa. Make sure all the ingredients are at room temperature for the best results.

The first step is to beat the egg yolks with 2/3 of the amount of sugar and four tablespoons of hot water. Use a mixer on medium speed to achieve a whitish and fluffy foam. Then add the vanilla and lemon zest, mixing gently so as not to lose the air in the mixture. In a separate bowl, combine the flour with the cornstarch and baking powder. This combination will ensure a fluffy and well-aerated cake.

Start incorporating the flour mixture into the egg yolk foam, alternating with the oil and milk. Use a spatula to gently mix, being careful not to form lumps. In another bowl, beat the egg whites with a pinch of salt until stiff. Then, gradually add the remaining sugar and continue mixing until you obtain a glossy and firm meringue.

Now, combine the egg white foam with the egg yolk mixture, mixing with a spatula again, from top to bottom. It is important to be gentle at this stage so that the egg whites do not deflate. Divide the resulting mixture into two equal parts. In one of them, add the two tablespoons of cocoa, mixing gently to obtain an even mixture.

Prepare a baking tray lined with parchment paper. Using a spoon or a ladle, pour the two mixtures into the tray, alternating between the white and the cocoa mixture to create a marbled effect. Start from one corner and continue pouring the mixtures in diagonal lines to achieve an attractive appearance.

Preheat the oven to 180 degrees Celsius. Place the tray in the oven and bake the cake for about 30-40 minutes, or until a toothpick inserted in the middle of the cake comes out clean. Once done, let the cake cool in the tray for 10 minutes, then transfer it to a rack to cool completely. You can decorate it with powdered sugar or chocolate glaze, depending on your preferences.
