Winter Cake

To prepare a delicious and fragrant cake, we start by beating the eggs with salt and sugar until frothy. This process is essential as the incorporated air will give the cake a light and fluffy texture. We continue to beat with a mixer and gradually add the oil and water, mixing well to achieve a homogeneous composition. For an extra flavor, we add vanilla sugar and grated orange and lemon zest, which will give a fresh and invigorating taste.
In another bowl, we sift the flour together with the baking powder. These dry ingredients are essential to ensure an even rise of the cake. After mixing the flour well with the other ingredients, we gradually add them to the egg mixture, carefully incorporating everything with a spatula. It is important to mix gently to avoid deflating the batter.
Once we have a homogeneous batter, we pour it into a cake pan lined with parchment paper and bake for about 50 minutes at 175 degrees Celsius. We check if it is ready by doing the toothpick test; if it comes out clean, the cake is perfect. Once baked, we let it cool on a rack, and after it has completely cooled, we cut it into three layers with a bread knife.
In the meantime, we prepare the cream. We mix the powdered milk with sugar, vanilla paste, and flour in a bowl. We add water, then place the mixture on the heat, stirring continuously to avoid lumps. When the cream becomes thick, we let it cool. In another bowl, we beat the butter at room temperature and combine it with the cooled cream, then add cocoa and mix well. We refrigerate this mixture for about an hour to firm it up a bit.
To add a surprise element, we use a jelly that we prepare according to the instructions on the package. Once the jelly turns into a syrup, we carefully pour it over the first layer of cake, allowing it to soak into the biscuit. Then, we spread a generous layer of cream and place the next layer of cake. We repeat this process until the layers are complete, and the cake is ready to be refrigerated for 2 hours.
For the glaze, we heat the liquid cream on the stove, break the chocolate into pieces, and place them in a bowl. Once the cream is warm, we pour it over the chocolate and mix with a hand mixer until the chocolate is completely melted. We add the butter and continue beating. We let the glaze cool slightly until it starts to thicken, then pour it over the prepared cake.
After the cake is covered with glaze, we put it back in the fridge to set. Finally, we decorate the cake as desired, using fresh fruits, chocolate flakes, or ground nuts. Enjoy your meal!
