Baked Pangasius

Ingredients: pangasius fillet - rosemary - crushed garlic / garlic powder, to taste - juice from ½ lemon - lemon slices - tomato paste - green onion - butter - salt - pepper

To prepare this delicious baked fish, start by choosing fresh fish fillets, such as cod, salmon, or trout, depending on your preferences. Clean the fillets of any bones and make sure they are well dried with paper towels. Now, you can move on to seasoning the fish. Sprinkle salt and pepper on both sides of the fillets, so that the flavors penetrate well into the meat. Add crushed garlic or garlic powder, as preferred, and fresh or dried rosemary, which will provide an intense and aromatic flavor. Let the fish marinate for about 15 minutes, so that the flavors blend perfectly.

In the meantime, prepare the aluminum foil by greasing it with a thin layer of butter on the inside to prevent the fish from sticking. The foil should be large enough to completely wrap each fillet. Carefully place each fish fillet on the greased foil, adding a few drops of lemon juice for added freshness. Spread the fillet with a tomato paste, which will add a slightly sweet flavor and keep the fish moist during baking. Sprinkle with green onion slices and, optionally, a few thin slices of lemon, which will caramelize during baking, bringing a delicious taste.

After you have prepared all the fillets, carefully wrap them in foil, ensuring they are well sealed. Place the resulting packets in a heat-resistant dish that can go in the oven. Preheat the oven to a moderate temperature, around 180-200 degrees Celsius, and let the fish packets bake for about 20 minutes. This time will allow the fish to cook evenly while retaining its juiciness.

After the baking time has expired, carefully remove the dish from the oven, being careful not to burn yourself with the steam that will escape when opening the foil. Use a spatula or kitchen tongs to open the packets carefully, so as not to spill the delicious accumulated juice. Serve the fish warm, alongside your favorite side dish, whether it’s creamy mashed potatoes, a fresh salad, or grilled vegetables. This simple yet flavorful dish will bring a touch of joy to every meal, being perfect for any occasion. Enjoy your meal!
