Hello! Today I have the pleasure of presenting you with a delicious and simple recipe, in which the absolute star is the fish. I chose to work with trout, a fish with fine, flavorful flesh, low in fat and which does not require many ingredients to highlight its natural taste. It is important to mention that trout is a very sensitive fish, so we must keep it on ice until it is time to prepare it.

The first step in preparing this dish is to carefully wash the trout under a stream of cold water, making sure to remove any impurities. Then, we clean the fish, removing the intestines and gills, and let it drain in a cool place. After it has dried well, we brush each fish with a drizzle of olive oil to give it an extra flavor and to help the spices adhere. The next step is to salt and pepper the trout both on the outside and inside, so that each bite is full of taste.

For an extra touch of flavor, we add a few capers, well drained from the brine they were preserved in, and a few sprigs of fresh rosemary. These will combine perfectly with the delicate flavor of the fish. We wrap each trout in parchment paper, creating a packet that will help retain the juices and flavors during baking. We place the prepared fish in a tray, which we put in the preheated oven at 180 degrees Celsius. Baking takes about 15 minutes for a 300-gram trout, during which it is essential to turn the fish on both sides for even cooking.

In the meantime, we can prepare the sauce that will accompany this delicious dish. In a small porcelain bowl, we mix the olive oil with freshly squeezed lemon juice until we obtain a homogeneous emulsion. Then, we add salt, pepper to taste, and finely chopped or crushed garlic, depending on preferences. For an extra touch of freshness, we don’t forget to add chopped fresh parsley, which will give a vibrant note to our sauce.

Once the trout is ready, we serve it warm, alongside the aromatic sauce. This simple yet refined dish is perfect for a family dinner or to impress guests. Surely, each bite will be an explosion of flavors and will bring a touch of joy to every plate!
