Noodles with Shrimp
Ingredients: 200 g noodles, 200-250 g shrimp, 1 onion, 1 green pepper, 2 cloves of garlic, 2 tbsp tomato paste (or finely chopped tomatoes), 1/2 l fish broth (or Knorr fish or vegetable broth), 2-3 tbsp olive oil, salt, saffron or food coloring
To prepare a delicious fideuá with shrimp and peppers, we will start by ensuring that all the ingredients are at hand and that we are ready to enjoy a pleasant and engaging cooking process. In a large skillet, we will pour a generous amount of olive oil, which we will heat over medium heat. The oil should be hot enough but not so much that it smokes. Once the oil is ready, we add finely chopped onion, which will add a special flavor to our dish.
After the onion has started to become translucent, we add the fideuá, stirring constantly to ensure that each strand of fideuá absorbs the flavors of the oil and onion. We will continue to sauté the mixture, observing how the fideuá begins to take on a golden hue, which will add extra flavor to the dish. When everything has a pleasant color, we will remove the skillet from the heat and prepare to add the other ingredients.
In a separate skillet, we will sauté the diced red pepper together with the crushed garlic. This aromatic duo will bring an intense flavor and a note of freshness. When the pepper becomes soft and the garlic releases its aroma, we will add the broth, mixing well to combine all the ingredients. Once the mixture is homogeneous, we will add it to the skillet with the onion and fideuá, stirring again to ensure that all the flavors blend harmoniously.
After the ingredients are well mixed, we will add a pinch of saffron, which will give the dish a vibrant color and a subtle taste. Then, we pour in the fish stock or water, ensuring that the fideuá will have enough liquid to cook. We will let everything simmer over medium heat for about 7-10 minutes, or until the fideuá is cooked but still al dente.
In the last minutes of cooking, we add the peeled shrimp, which will cook quickly and absorb the delicious flavors of the dish. If you prefer, you can also add mussels, which will bring an interesting texture and a taste of the sea. When the shrimp turn pink and charming, it is time to stop cooking to avoid overcooking them. We place the fideuá on a platter, garnishing it with freshly chopped parsley. Enjoy this dish alongside a glass of white wine to complete the culinary experience!
