Salmon in papillote

Ingredients: - 2 pieces of salmon - 2 slices of tomatoes - 2 slices of oranges - 2 slices of lemon - half an onion in rings - 1 small zucchini, cut into strips if you like, or rings - 2 bay leaves - spices, salt, pepper, and a little olive oil - 2 larger sheets of aluminum foil

To prepare a delicious and healthy meal, we start with a fresh piece of fish, which will be baked in aluminum foil, thus retaining its juiciness and flavors. First, wash the fish well under a stream of cold water, making sure to remove any impurities. After drying it with a paper towel, prepare a piece of aluminum foil large enough to completely wrap the fish.

Carefully coat one side of the foil with a drizzle of olive oil, which will help prevent the fish from sticking. Place the fish in the center of the foil, making sure to orient it with the dorsal side facing up. Sprinkle salt and pepper over the entire surface of the fish to enhance its flavor. Then, add a few thin slices of onion, which will bring an extra sweetness and savoriness.

Cut a ripe tomato into slices and distribute them evenly on top of the fish. Zucchini, a versatile ingredient, will add a crunchy texture. Slice it into thin rounds and add a few slices over the tomato. Don’t forget to include a few slices of orange, which will provide a citrus note, perfectly complementing the dish. This vegetable mix will create a flavorful base, and the fish will be enveloped in delicious aromas.

For an extra flavor boost, insert a bay leaf into the aluminum foil, which will infuse the dish with a subtle aroma. Feel free to add another sprinkle of salt and pepper, adjusting the spices to your preferred taste. Now, carefully close the foil, gathering the edges and sealing them tightly so that steam cannot escape. It is essential for the fish to cook evenly in its juices.

Preheat the oven to a medium temperature, around 180°C. Place the foil packet on a tray and put it in the oven. Cook for about 30-40 minutes, depending on the thickness of the fish. If you want a slightly browned crust, you can open the foil in the last 5 minutes of cooking, allowing the steam to escape. Once the fish is cooked, remove it from the oven and let it rest for a few minutes before unwrapping the foil. Serve the dish warm, alongside a fresh salad or mashed potatoes, and enjoy a meal full of taste and health!
