Cake 'Pat'

 Ingredients: Base - 9 eggs - 9 tablespoons of sugar - 8 tablespoons of flour - a pinch of salt Cream 1 - 250 ml liquid cream, - 3 tablespoons of honey, - 6 g gelatin, - fruit from compote, - I had a fruit salad Cream 2 - 2 sheets of gelatin (5 g) - 250 ml cream - half a jar of jam (I used apricot) (this cream recipe belongs to Pupi, and it's incredibly easy to make and delicious) For decoration, fondant and royal icing for the carpet and the back part of the bed, I made the little man, pillows, and blanket from fondant.

To prepare an extraordinary dessert, we start with a fluffy base made from 9 eggs. The first step is to separate the eggs, ensuring that no yolk remains in the egg whites. We beat the egg whites with a mixer until we achieve a firm foam, which will add volume and aeration to our base. In a separate bowl, we mix the yolks with the sugar until the mixture becomes creamy and light in color. It is essential for the sugar to dissolve completely in this process to avoid unwanted granules. Once we have a homogeneous mixture, we carefully fold in the egg white foam, mixing gently with a spatula to avoid losing the incorporated air. Finally, we fold in a little sifted flour, mixing again with delicate motions.

After the mixture is ready, we pour it into a square mold lined with baking paper and bake it at moderate heat. When the base is golden brown and passes the toothpick test, we let it cool completely. In the meantime, we prepare the two delicious creams. For the first cream, we dissolve the gelatin in cold water for 10 minutes. Then, we gently heat it, either in the microwave or over steam, until it becomes liquid. In another bowl, we whip the cream until it becomes firm and add the honey, mixing well. The dissolved gelatin is added to this mixture, followed by finely chopped fruits. This combination will add a fresh and vibrant note to the cream.

For the second cream, we repeat the process with the gelatin, and separately, we heat the jam with a little water, stirring until it becomes more liquid. After achieving the right consistency, we mix the jam, add the gelatin, and let it reach room temperature. Finally, we fold in the whipped cream and mix gently.

Once the base has cooled, we cut it into three equal slices. We prepare a syrup from water, sugar, and our favorite flavors, which we use to soak the layers. We place a layer of cream, followed by another layer of the base, continuing until the end. The dessert is left to chill for a few hours to allow the creams to set. Before serving, we flip the cake onto a platter and decorate it. For the final look, we use a sugar paste sheet that we made a few days ago, applying royal icing and creating an irregular design with a spoon to imitate wool. Likewise, we prepare a red carpet from sugar paste that adds a refined detail. This dessert is not only a true delight for the taste buds but also a visual gem, perfect for any special occasion.
