How to Chop Citrus Peels

 Ingredients: citrus (lemons, oranges, etc.)

1/ Peel the fruit skin into strips. Use a special knife, the one intended for peeling vegetables, to strip off strips from the colored portion of the skin. This method is ideal for obtaining fine strips that will add a special aromatic flavor to your dishes. It is important to be careful not to cut into the white skin of the fruit, as it has a bitter taste that can affect the final aroma. If you accidentally cut into the white part, do not panic! Use a small-bladed knife to carefully remove that bitter portion from the strips of skin. Once you have obtained the desired strips, you can use them as they are in various recipes or chop them finely to integrate them into more complex dishes. The fruit skin can add an extra flavor and an interesting color note.

2/ Cut the strips into small pieces. After obtaining the strips of skin, it’s time to turn them into smaller pieces that will be easier to use in your recipes. Stack 2-3 strips of skin on top of each other, being careful to align them well. Using a sharp kitchen knife, cut the strips lengthwise into very fine strips. This cutting technique will allow you to control the size of the pieces and achieve a uniform consistency. Then, take the cut strips and cut them crosswise into very small pieces. These pieces can be used as they are to add a touch of freshness and flavor to dishes such as salads, desserts, or sauces. You can also use these pieces to decorate platters or to enrich plates with an interesting texture. Experiment with different combinations and see how the fruit skin can transform an ordinary dish into an unforgettable culinary experience.
