Ice Cream Powder Cake

To prepare a delicious and sophisticated cake, we start by separating the eggs. Using an electric mixer, we beat the egg whites until frothy, gradually adding the sugar. It is essential to add the sugar little by little to achieve a firm and glossy meringue, which will give an airy texture to our cake. Once the egg whites have reached the desired consistency, we take care of the yolks. In another bowl, we mix the yolks with a little water, then carefully fold this mixture into the beaten egg whites using a spatula to maintain the aeration of the composition.
The next step involves adding the flour. It is important to incorporate it gently, with a spatula or spoon, to avoid losing air from the meringue. Once the flour is well integrated, we prepare to caramelize a pot. This process involves melting the sugar in the pot, covering not only the bottom but also the walls, to ensure that the cake will have a sweet and glossy glaze. After the sugar has caramelized, we carefully pour the cake mixture into the pot and place it in the oven at a moderate heat. The cake is ready when it passes the toothpick test, meaning the toothpick comes out clean when inserted in the middle of the cake.
Meanwhile, we take care of the ice cream. Using a mixer, we combine 200 ml of milk with two packets of ice cream powder, achieving a creamy mixture. We prepare two types of ice cream: one with lemon flavor and another with apricot flavor. After making the ice cream, we put it in the refrigerator to harden. At the same time, we prepare the pastry cream according to the instructions on the package and let it chill in the fridge.
As the cake bakes, we prepare the syrup. We mix all the necessary ingredients to obtain a flavored syrup that will add moisture to the layers. Once the cake is baked, we let it cool down. Due to the caramel, it will come out easily from the pot. After it has completely cooled, we cut the cake into three equal layers and soak them one by one with the syrup obtained.
On the first layer, we spread the desired ice cream, and on the second, we apply the other flavor. Finally, we coat the entire surface of the cake with the glaze prepared according to the instructions on the package. Once the glaze has set, we can add the pastry cream or whipped cream on top, thus creating a dessert with an attractive appearance and exquisite taste. Our cake is now ready to be enjoyed, a true delicacy that will delight any table!
