Autumn in the oven
Ingredients: chicken thighs 8 pcs, carrot 3 pcs, apples 3 pcs, quinces 1 pc, celery 1 pc, potatoes 3-4 pcs, peach 1 pc, cauliflower, bell pepper 1 pc, olive oil, pepper, salt, meat seasoning, honey 1 tbsp, white wine 250ml, lemon, fresh parsley, olive oil
Apples and quinces, cut into large slices, are the basic ingredients that will bring a sweet-sour taste to our dish. In a large pan, heated over medium heat, we add a few tablespoons of high-quality olive oil. When the oil is well heated, we add the apple and quince slices, allowing them to sauté for a few minutes until they become slightly golden and release their delicious aromas. They should be removed onto a plate, keeping them warm while we take care of the next step of the recipe.
In the remaining oil in the pan, we fry the chicken drumsticks, which have been previously seasoned with salt, pepper, and a meat spice mix to give them a rich and savory flavor. We let the drumsticks brown well on all sides, so they become crispy and appetizing.
Meanwhile, we prepare a tray that we will line with aluminum foil, although this step is not mandatory. In the tray, we add the potatoes cut into large slices, roughly chopped carrots, previously sautéed apples and quinces, fried drumsticks, a few cauliflower florets, slices of bell pepper, and celery slices. We can also add a few slices of peach, which will bring extra sweetness and a surprising taste.
In a separate container, we use the remaining oil from frying the drumsticks to add wine, honey, salt, and pepper, then complete with 200 ml of water. We mix the ingredients well and let it boil for a few moments so that the flavors combine harmoniously. We pour this mixture over the ingredients in the tray, covering everything evenly.
We cover the tray with aluminum foil and place it in the preheated oven at 180 degrees Celsius, allowing it to bake for 45 minutes. In the last 10 minutes, we remove the aluminum foil to allow the dish to brown nicely.
After being taken out of the oven, we garnish the dish with fresh lemon slices and chopped parsley leaves to add a vibrant look and intensify the flavors. This recipe is not only delicious but also colorful, perfect for a meal with family or friends. Enjoy your meal!
