Chicken Offal Soup
Ingredients: 250 g gizzards, 250 g chicken hearts, 4-5 chicken wings (I used duck), 2-3 chicken necks (I didn't have), 1.5 l water, 1.5 l brine (the liquid from pickled cabbage), oil, 1 parsnip, 1 leek, 2 carrots, 1/2 cup of cooked rice, lovage to taste, salt if needed (the brine is salty)
The offal, after being well cleaned and washed, is boiled in a pot with water and salt. It is important to let it simmer over medium heat so that it cooks evenly and becomes tender. In the meantime, we take care of the vegetables. The leeks are washed very well and sliced into thin rounds, making sure to remove the tougher green parts. The vegetables, which may include carrots, celery, and peppers, are carefully peeled and cut into equal-sized cubes to cook evenly.
The rice is boiled separately in salted water, according to the instructions on the package. This will add consistency and absorb the flavors from the soup. In a large skillet, the oil is heated, and then the diced vegetables and leeks are added. They are sautéed over medium heat, stirring frequently, until the vegetables become slightly translucent and release their aromas. This is the ideal time to add desired spices, such as pepper or bay leaves, to enhance the flavor.
When the offal, which is boiling in another pot, becomes tender, we add it over the sautéed vegetables, gently mixing to combine the ingredients. Meanwhile, in another pot, we boil the sour liquid for about 5 minutes. The sour liquid is an essential ingredient that will add a tangy note and enrich the dish's aroma. After it has boiled, we turn off the heat and return to the mixture of offal and vegetables.
Water is poured over the vegetables in the pot and left to simmer slowly, allowing all the flavors to combine perfectly. When the entire mixture is boiled and the vegetables are soft, the sour liquid and the boiled rice are added. We also remember to add the finely chopped lovage, which will bring an extra freshness. They are cooked together for about 5 more minutes to allow the flavors to blend harmoniously. Finally, the taste is checked, and salt is adjusted if necessary. The dish is served hot, ideal for a comforting meal on cool days, being a true delicacy that will delight every palate.
