Plum Cake
Ingredients: For a medium tray, from which approximately 16-20 pieces can be cut. We need: -600 g plums (I used bistrite plums, pitted, frozen specifically for the cake, which I thawed, drained, split in half, and then coated in flour) -400 g flour -4 eggs -250 g sugar -1-2 packets of vanilla sugar -5 tablespoons of oil -150 g yogurt -2 teaspoons of lemon zest -white flour for the plums -powdered sugar
A delicious and simple plum cake recipe that will bring a touch of joy to every moment of the day, especially when you meet with loved ones. We start by preparing the necessary ingredients: 4 fresh eggs, 200 g of sugar, 1 packet of vanilla sugar, 100 ml of oil, 150 g of yogurt, the grated zest of one lemon, 300 g of flour, and a pinch of salt. Also, don't forget the plums, well-ripened and fragrant, needed to add a sweet-sour taste to the cake.
In a large bowl, crack the 4 eggs and add the sugar along with the vanilla sugar. Use a mixer on medium speed to beat them together until you obtain a fluffy and light-colored mixture, similar to thick cream. It is essential for the sugar to dissolve completely to avoid crystals in the final cake. Once you have achieved this texture, slowly add the oil and yogurt, continuing to mix carefully so as not to deflate the air in the mixture.
Now is the time to add the grated lemon zest, which will provide a fresh fragrance and wonderful flavor. Sifting the flour is an important step, as it helps prevent lumps from forming in the dough. Incorporate the sifted flour into the mixture, adding it gradually, in a rain-like manner, and mixing with a spatula from the bottom up to maintain the aeration of the dough.
Prepare a suitable baking tray, lining it with parchment paper, ensuring it is well spread out. Pour the obtained dough into the tray and smooth the surface with a spatula to make it even. The plums, which have been washed and cut into halves or quarters, should be dusted with a bit of flour so they do not sink in the dough during baking. Carefully place them on the surface of the dough, making sure they are evenly distributed.
Preheat the oven to 180 degrees Celsius and place the cake inside. Let it bake for 30-40 minutes, or until it becomes golden and fluffy, and a toothpick inserted in the center comes out clean. After baking, let the cake cool slightly in the tray, then you can dust it with powdered sugar. Once it has completely cooled, it is ready to be cut and served, bringing a touch of flavor and joy to each slice.
