Pasta with Salmon

 Ingredients: For 2 people: 300 grams of fresh salmon, 1 small onion, pasta to taste, 250 grams of sweet cream, 100 ml of white wine, 1 clove of garlic, 150 ml of fish broth or a fish stock cube, fresh parsley, margarine or butter.

Salmon is definitely one of the most delicious and versatile types of fish, and its combination with pasta is simply irresistible. So, when I decided to prepare a special dinner for a weekend evening, I knew that this ingredient would be the star of the night. After a long day at work, when Silvius was away on a business trip, I invited a colleague from the office for an evening of cooking and stories. While we enjoyed our conversation, I started preparing a simple yet extraordinarily tasty recipe to delight our taste buds.

We begin by finely chopping half an onion. This will add a subtle flavor that will blend perfectly with the salmon. We heat a pan with butter or margarine, allowing them to melt until the temperature is ideal for adding the onion. We let it sauté until it becomes transparent, at which point it's time to add the cubes of fresh salmon, cut into pieces about 2.5 cm - 3 cm. It's important to stir quickly, ensuring that each piece of fish changes color just a little, without burning, to preserve its flavor.

Once the salmon has taken on a golden hue, we add a crushed garlic clove to intensify the flavors. If you have some fish stock on hand, it will work wonders, but a splash of vegetable broth or white wine will also be enough to cover the fish. Let it simmer until the wine reduces by half, and the flavors concentrate. Then, add sweet cream. You can use cooking cream or even whipping cream, as long as it doesn't contain sugar. The amount of cream depends on your preferences, but I prefer to be generous.

If you are preparing just two servings, now is the time to add the boiled and drained pasta directly to the pan. Gently mix, tilting the pan to combine the ingredients. Otherwise, you can serve the pasta on a plate and pour the salmon sauce on top. Finally, sprinkle a bit of grated Parmesan and freshly chopped parsley for an extra touch of freshness.

I didn't have shrimp on hand, but I recommend adding a few peeled shrimp along with the salmon. Their flavor will add a delicious marine note to the dish. Enjoy your meal!
