Pasta boiled directly in sauce

 Ingredients: For 2 servings: 1 clove of garlic or 1/4 chopped onion or leek (or as I used, a piece of celery stalk) 200 g pasta 200 ml tomato juice 1 tomato chopped fresh basil leaves 1-2 tablespoons of oil salt mozzarella 2 slices

We start this delicious and simple recipe that will transform an ordinary meal into an unforgettable culinary experience. To begin, we take a medium-sized pot and add a splash of olive oil, enough to cover the bottom of the pot. If you want to add a hint of flavor, either a whole clove of garlic or a few thin slices of chopped onion can be added now. We turn on the heat, but not too high, to let the flavors gradually reveal themselves.

Once the oil is heated and the garlic or onion becomes golden and fragrant, we add 1-2 fresh tomatoes, cut into large pieces. If you have a larger, elongated tomato, it will add juiciness to the dish. Then, we add the pasta – 200 grams, suitable for this dish. It is important to choose pasta that absorbs the flavors of the sauce, such as penne or fusilli.

After adding the pasta, we pour in the liquid. Ideally, we should use a more liquid tomato juice, which will combine perfectly with the pasta. A cup of tomato juice is enough, but water can also be used if you want a less intense flavor. Don’t forget to add salt to enhance the flavors.

The heat should be low, and constant stirring is essential. It is important not to let the pasta stick to the bottom of the pot, so we make sure to stir with a wooden spoon using gentle movements. The pasta will cook for less time than indicated on the package, so if the package says 10 minutes, we will check it after about 8 minutes. If the liquid has reduced and the pasta is still not ready, we add a little water, carefully, so as not to make the dish too watery.

When the pasta is al dente and the liquid has almost disappeared, we turn off the heat and add fresh basil torn into large pieces, to release its aroma. Also, the cubes of mozzarella are added now, providing an extra creaminess. We mix everything carefully, ensuring that each piece of pasta is coated with the delicious sauce.

Let it rest with the lid on for 5-10 minutes, during which the flavors will blend perfectly. It is ideal to serve the pasta at a pleasant temperature, not too hot, to enjoy all the nuances of taste. This simple and quick recipe, yet full of flavor, will surely become a favorite among loved ones. Enjoy every bite!
