Carbonara spaghetti recipe
Ingredients: Spaghetti carbonara recipe 400 g spaghetti (I used farfalle) 300 g pressed chicken or pork ham 2 cloves of garlic 400 g sweet cream (the one for whipped cream) 2 egg yolks 4 tablespoons of olive oil 150 g grated parmesan salt to taste spices: basil, pepper
In a large pot, pour water and add a tablespoon of olive oil, salt, and vegetables. This combination will create the ideal base for boiling the pasta. Place the pot on the heat and wait until the water reaches boiling point, at which point the bubbles will become active and form waves of steam. When the water is boiling, add the pasta, making sure they are completely covered by the liquid. It is essential to let them boil for about 8 minutes, or according to the package instructions, to achieve the perfect al dente texture.
After the pasta has boiled, remove it from the heat and carefully drain it into a large colander, allowing it to drain quickly without cooling down. To prevent them from sticking together and to maintain their volume, immediately add a splash of olive oil, gently tossing with a fork. This way, the pasta will keep its slightly fluffy texture and won’t stick together.
Meanwhile, prepare the delicious sauce. In a bowl, combine the egg yolks with cream, mixing them well. Add half of the grated Parmesan cheese, salt to taste, and freshly ground black pepper. This mixture will bring a rich creaminess to our sauce.
In a pan, slice the pressed ham into thin slices, which we fry in a generous amount of olive oil. Add a few finely chopped garlic cloves, which will release an irresistible aroma. When the garlic turns golden and fragrant, it’s time to add the cream and egg yolk sauce, stirring constantly to achieve a smooth texture.
Once the sauce is ready, add the drained pasta to the pan, carefully tossing to coat them evenly with the sauce. If desired, we can sprinkle some fresh basil, adding a note of freshness and flavor to our dish. Serve hot, topped with grated Parmesan, turning each portion into an unforgettable culinary experience. This simple and quick recipe will bring joy and flavor to your table!
