Noodles with Chicken
Ingredients: 3 blocks of noodles (150 grams) 2 - 3 tablespoons of oil 1 chicken breast cut into strips (the diameter of a finger) 3 carrots cut into strips 1 bell pepper cut into strips 2 tablespoons honey 1 tablespoon soy sauce juice from 1 lemon or 2 limes (limes are recommended) 3 tablespoons sesame Optional: coriander leaves (I didn't have any) salt to taste

First, we will take the chicken breast and, if you prefer, you can lightly boil it before cooking. This step is not absolutely necessary, but it helps achieve a more tender texture. Heat a deep pan or a wok with a little oil, preferably olive or sunflower oil, over medium heat.
Once the oil is hot, add the chicken breast cut into cubes or thin strips. Let it brown evenly, being careful to turn it occasionally to cook on all sides. After the chicken has turned golden, add the carrot sliced thinly and the bell pepper, which can be red or yellow, for an extra splash of color. Mix the ingredients and cook them together until the carrot becomes a little softer, but without losing its crunch. This is the moment to sprinkle a pinch of salt to enhance the flavors.
Continuing, add the honey, soy sauce, and lemon juice, mixing well to combine all the ingredients. Allow the mixture to simmer gently, so that a delicious foam forms, for about 30 seconds. This stage will allow the flavors to blend perfectly, creating a savory sauce that will coat the chicken and vegetables.
Meanwhile, prepare the noodles according to the package instructions. Once they are ready, drain them and add them to the pan, along with the sesame seeds. Mix everything well so that the sauce distributes evenly, and the noodles absorb the delicious flavors. Keep the mixture on the heat for a few seconds to warm it through.
Before serving, don’t forget to sprinkle fresh chopped cilantro over the dish, adding a touch of freshness and an extra layer of flavor.
