Carrot and Orange Soup

 Ingredients: 500g carrots, 1 onion, 1 orange, 750ml of soup (meat or vegetable, I made vegetable because it's Friday), 150ml of liquid cream, parsley for garnish

Start by preparing the necessary ingredients for this delicious carrot and orange soup, which will bring a fresh and vibrant touch to your table. You will need a medium onion, two or three large carrots, about a liter of vegetable broth, a beautiful orange, liquid cream for cooking, olive oil, and your favorite spices, such as salt and pepper.

The first step is to peel and finely chop the onion. Then, heat a deep pan or pot with a little olive oil over medium heat. Add the chopped onion and sauté patiently, stirring occasionally, until it becomes translucent and shiny, which will take about 5-7 minutes. The aroma of the sautéed onion will fill the kitchen and whet the appetite of those around you.

Once the onion is ready, peel the carrots and cut them into thin rounds or cubes, depending on your preference. Add the carrots to the pan and sauté them together with the onion for 3-5 minutes, stirring gently so that the flavors blend. This step will enhance the flavor of the soup.

After the carrots have started to soften, add the vegetable broth, which will add extra flavor to the dish. Let everything simmer over medium heat for about 20 minutes, or until the carrots are completely soft. This cooking time will allow the vegetables to release their flavors into the soup.

When the vegetables are cooked, take a blender and pour the contents of the pot into it. Blend everything until you achieve a smooth and velvety cream. If the soup is too thick, you can add a little water or broth, depending on your consistency preference.

Now comes the special moment: grate the zest from the orange, being careful not to include the white part, which is bitter. Squeeze the juice from half of the orange and add both the grated zest and the juice to the soup cream. Mix well to integrate the citrus flavors, which will give the soup a fresh and refreshing note.

Finally, incorporate the liquid cream into the soup, stirring with a spatula or whisk until fully combined. Taste the soup and adjust with salt and pepper to your liking. Serve the carrot and orange soup warm, garnished with a few slices of orange or with crunchy croutons for an extra texture.
