Apple Soup / Holstein Beer

 Ingredients: 150 g wholemeal bread, 1/2 stick of cinnamon, juice and zest of 1/2 lemon, 125 g sugar, 100 g raisins, 2 apples, 500 ml Hostein beer, 1 egg, salt

We start by preparing the necessary ingredients for this delicious recipe. We will use whole grain bread, which adds extra flavor and nutrition to our dish. We cut the bread into small cubes so that it can easily soak in water. Then, we place these cubes in a pot and cover them with 500 ml of water. We let it boil for a few minutes until the bread becomes soft and turns into a porridge. After boiling, we drain this porridge, carefully keeping the resulting water, which will have a beige hue. This is our flavored base, which we will use further.

We put the obtained water back on the heat and add some essential spices: a stick of cinnamon, the freshly squeezed juice from a lemon, and its peel for a more intense flavor. We use the whole lemon without grating it, for fear of ruining the aroma. We also add a handful of raisins, salt, and 75 grams of sugar, which will balance the acidity of the lemon and add sweetness.

In the meantime, we take care of the apples. We peel two beautiful apples and slice them thinly. It is important to move quickly so that the apples do not oxidize. When the water in the pot begins to boil, we add the apple slices and, surprise, a beer that will give a special taste to the dish. We let everything boil for 10 minutes, being careful not to let the apples crumble. It is essential to stay vigilant, as the apples can become too soft if left on the heat for too long.

After the ten minutes, we take an egg yolk and beat it well, then add it to our flavored soup, stirring quickly to prevent coagulation. Separately, we beat the egg white with the remaining sugar until we obtain a stiff and fluffy foam. This foam will be placed with a spoon on top of the hot soup, creating a special visual effect. We cover the pot and let it rest for 3-4 minutes. This is the moment when the meringue will puff up, and the flavors will intertwine in a symphony of tastes.
