Rice with Soy Stew
Ingredients: 1 cup rice, 70 g soy granules, 1 onion, 2 tablespoons tomato paste, dill, pepper, paprika, vegetable oil
Soy granules are an excellent source of plant-based protein and can transform any meal into a delicious and filling experience. We start by soaking them in warm water, adding a little vegeta to give them a special flavor. We let the granules absorb the flavors for about 20 minutes. This step is essential as it will help rehydrate the soy and improve its texture.
In the meantime, we take care of the onion. We carefully peel it and cut it into thin slices so that it caramelizes evenly. In a pan, we heat a little oil, enough to cover the bottom, and add the sliced onion. We sauté the onion over medium heat, stirring periodically, until it becomes glassy and reveals its sweet aroma. This is the ideal moment to add the well-drained soy granules, seasoning to taste with vegeta, freshly ground pepper, and a teaspoon of sweet paprika to add a splash of color and flavor. We let everything simmer on low heat, stirring occasionally, until the soy becomes tender and well infused.
Once the soy is cooked, it’s time to intensify the flavor. We add tomato paste, which will provide a pleasant acidity and creamy texture, and chopped fresh dill, which will bring a fresh and aromatic note. We let the mixture cook for a few minutes, allowing the flavors to combine harmoniously.
In the meantime, we turn our attention to the rice. We rinse the rice under cold running water to remove excess starch, then we put it to boil in a pot with 2-3 cups of water, depending on the type of rice used. We also add a little vegeta for extra flavor. We let the rice boil until it becomes slightly soft, but not completely, as it will continue to absorb the liquid. When it’s almost ready, we add chopped fresh parsley, stirring gently to distribute the flavor evenly.
Once the rice is cooked, we place it on a flat plate, forming a small hole in the middle. This will become the perfect nest for the soy stew, which will add not only flavor but also an attractive presentation. We fill the hole with the soy stew, arranging it carefully to create a contrast of colors. This dish is not only delicious but also nourishing, making it an excellent option for vegans or those looking to reduce meat consumption. It is served warm, alongside a fresh green salad or steamed vegetables, to complete the meal in a healthy and balanced way.
