5 Vegetable Soup
Ingredients: a small cauliflower, 2 potatoes, 1 red bell pepper, 1/2 white bell pepper, 2 carrots, 1 piece of leek, a handful of wheat, 60g of parmesan, 100g of smoked bacon, vegetable, salt, pepper, 500ml of milk
We start by preparing the vegetables we want in the soup. We choose carrots, celery, potatoes, and onion, all diced. In a large pot, we bring water to a boil and add a tablespoon of salt. When the water starts to boil, we add the diced vegetables and let them boil over medium heat for about 15-20 minutes, until they become soft and fragrant.
After the vegetables are cooked, we remove them from the water and transfer them to a blender. We blend everything until we achieve a fine and creamy mixture. If you prefer a soup with chunks, you can leave some of the vegetables whole. Next, we add the grains of wheat, which we can choose according to our preferences: durum wheat or softer wheat. We put the mixture back on the heat, allowing the wheat to swell and absorb the flavors of the vegetables.
Once the wheat is cooked and has a pleasant texture, we add the milk, which will give the soup a creamy consistency and a sweet taste. We mix well, then add the grated Parmesan, which will intensify the flavor and add a salty note. Don’t forget to add a bit of vegeta to enrich the aroma of the dish. We continue to stir over low heat until everything becomes homogeneous and well incorporated.
In the meantime, we prepare the bacon. We cut the bacon into small cubes and fry it in a pan until it becomes crispy and golden. This will add an interesting texture and a savory taste to our dish. When the soup is ready, we serve it in deep bowls, sprinkling the fried bacon on top.
