Well, let's talk about a delicacy from the heart of Bukovina, a recipe that brings together tradition and flavor: amnar soup. It is a soup that, although not very well known, combines simple yet flavorful ingredients, perfect for cool days or for moments when we want to indulge in a hearty and comforting dish.

To prepare this soup, we need a few essential ingredients: a piece of smoked meat, which will give a rich and deep flavor, a pair of smoked sausages for an extra touch of flavor, about 4-5 eggs, a varied selection of vegetables, sour cream, garlic, and fresh herbs. These will transform the soup into an unforgettable culinary experience.

The first step is to boil the smoked meat in a pot of water. Meanwhile, we take care of the vegetables. We peel the carrots, parsley, celery, potatoes, pepper, and onion, preparing them to be added to the soup. After the meat has boiled, we take it out, let it cool a bit, and cut it into larger pieces, which we keep on a plate. The broth in which the meat boiled is real gold, so we don't throw it away!

In a large pot, we sauté the carrots in a splash of butter, splashing with the broth from the smoked meat. We add salt if necessary and wait for it to boil. Once the garlic, onion, and other vegetables are added, the flavors will begin to blend and delight our senses. On another burner, we fry the sliced sausages in a little oil until they become crispy, then we add them to the pot along with the pieces of smoked meat and a few cubes of tomatoes.

We prepare an omelet from beaten eggs with salt, pepper, and parsley leaves, fried on both sides until golden, which we cut aesthetically and add to the soup. We continue to boil until the vegetables are ready, and the omelet has puffed up beautifully.

In the end, we prepare a dressing from egg yolk, sour cream, and crushed garlic, which we gradually incorporate into the soup, stirring carefully to prevent curdling. We flavor everything with fresh lovage and tarragon, which adds a note of freshness and an unmistakable taste.

When the soup has cooled slightly, we can sour it with lemon juice, sour brine, or vinegar, depending on preferences. This amnar soup is ideal to be served after holidays when we want a hearty dish that warms our soul and fills our belly.
