Creamy Apple Cake

 Ingredients: For the dough: 5 eggs, 1 cup of sugar, 1 cup of flour, 1 packet of baking powder, 1 packet of vanilla sugar, 5 tablespoons of oil, 1.5 kg of apples, 1 teaspoon of cinnamon, a pinch of salt. For the cream: 500 ml of milk, 2 packets of whipped cream pudding, 250 g of margarine, 15 tablespoons of sugar, 1 packet of vanilla sugar.

Preparation of the base: Start by washing the apples well, making sure to remove any impurities from the skin. After cleaning them, grate them using the larger side to obtain as uniform apple slices as possible. These will be carefully arranged in a baking tray lined with parchment paper, taking care not to overlap too much. Once arranged, sprinkle a few tablespoons of sugar on top, the amount depending on the sweetness of the apples you are using. To add a touch of flavor, sprinkle some cinnamon to taste.

Next, prepare the egg whites: beat them into a foam with a pinch of salt, vanilla sugar, and regular sugar. Use a mixer or a whisk, mixing until the sugar completely dissolves and you achieve a firm foam. In a separate bowl, mix the egg yolks with the oil, ensuring they are well incorporated. Then, gradually add this mixture over the egg whites. Be careful, it is crucial not to use the mixer at this stage; use a wooden or silicone spatula and gently fold from top to bottom to maintain the air in the foam.

The flour will be combined with the baking powder, and this mixture will be gradually incorporated into the egg white and yolk composition. Continue to mix with gentle movements from the bottom of the bowl to the surface to obtain a homogeneous dough. Once the dough is ready, pour it evenly over the apples in the tray and place the tray in the preheated oven. Let the base bake at a moderate heat, testing it with a toothpick to ensure it is well done. When the cake is ready, remove it from the oven and let it cool on a rack.

Preparation of the cream: Start by mixing the pudding powder with the vanilla sugar, regular sugar, and 10 tablespoons of milk in a small bowl. In a saucepan, bring the remaining milk to a boil; when it starts to boil, add the dissolved pudding mixture. Stir continuously to prevent sticking. Let the mixture cook until it thickens, then remove it from the heat and let it cool slightly at room temperature.

After the pudding has cooled, add the margarine and incorporate it well using the mixer until the cream becomes smooth and homogeneous. Place the cream in the refrigerator until the base has completely cooled. When the base is cooled, carefully turn it onto a tray so that the apples are on top. Remove the parchment paper and spread the cream evenly over the apples, ensuring it is distributed over the entire surface. Place the cake in the refrigerator for about 2 hours for the flavors to blend perfectly and for the cream to set. This apple and pudding cream cake is not only delicious but also a perfect dessert for any occasion!
