Fluffy Pancakes Recipe with Blueberries

To prepare delicious blueberry pancakes, we start by beating a fresh egg with sugar until we obtain a frothy, light-colored mixture. Once the egg and sugar are well mixed, we add a pinch of salt, which will balance the sweetness and enhance the flavors.

We continue by gradually sprinkling in the flour, constantly mixing to avoid lumps. It is important to use quality flour, preferably type 000 or 550, which will contribute to the fineness of the batter. After incorporating all the flour, we add half of the milk, continuing to mix to achieve a homogeneous batter. The milk should be at room temperature to combine better with the other ingredients.

Once we have obtained a uniform mixture, we pour in the remaining milk, mixing carefully. At this stage, the batter should have a fluid consistency, but not too thin. Now it is time to add the fresh blueberries, which have been washed and drained. It is important to mix gently with a spatula to avoid crushing the delicate fruits and to keep them intact in the batter.

After we have finished the mixture, we prepare to fry the pancakes. We place a non-stick pan over medium heat without adding oil or butter, as we want to achieve slightly crispy pancakes on the outside. When the pan is well heated, we pour in a portion of the batter, taking care to spread it evenly over the entire surface of the pan. We let the pancake fry for about 2-3 minutes or until the edges become slightly golden and a nice crust forms on the bottom.

Once the pancake is cooked, we flip it using a spatula and let it fry on the other side for another 1-2 minutes. We proceed this way for each pancake, stacking them on a plate and covering them with a clean towel to keep them warm and fluffy.
