Wheat, a versatile and nutrient-rich ingredient, is often used in traditional dishes as well as in innovative recipes. Start by washing the wheat using several waters until the water runs clear, an essential process to remove impurities. Although instructions may vary, washing in 3-4 waters is often sufficient. After washing the wheat, soak it in lukewarm water, not hot. The soaking time is important, so leave it for 3-4 hours to properly rehydrate.
Once the wheat has soaked, drain it well and transfer it to a yena dish or a baking tray that can be used in the oven. This is when you will add the 5 cups of water, making sure the wheat is completely covered. Preheat the oven to 160 degrees Celsius and place the dish in the oven. It is important not to stir the wheat during baking; by letting it cook evenly, you will achieve a perfect texture. Generally, the cooking process takes between 60 and 80 minutes. After an hour, check the wheat; if it is still crunchy, add half a cup of water and continue baking until it is fully absorbed.
Once the wheat is cooked, let the dish cool covered with aluminum foil. This step helps maintain moisture and intensify the flavors. When the wheat has completely cooled, add the sugar, ground nuts, and rum essence. Gently mix, lifting the ingredients from the bottom up to preserve the integrity of the wheat grains. You can adjust the amount of spices according to your preferences, adding, for example, cinnamon or vanilla for a richer taste.
To make the coliva more appealing, you can use small cups to portion it out. These can be decorated with colorful candies, providing a festive and attractive look. Check the wheat to be cooked before turning off the oven. If it is still crunchy, you can add half a cup of water and put it back in the oven until this is absorbed too. After it has boiled, let the dish cool covered with aluminum foil. When the wheat is cold, add sugar, walnut, and rum essence. Mix gently from bottom to top, making sure not to crush the wheat grains. You can adjust the spices to taste. To make it easier to share at church, we put the coliva in cups, which we decorate with small candies. I let the wheat cool overnight and prepare the coliva on the morning I go to church to ensure it doesn’t soften from the sugar. You don’t need to worry if the wheat seems too loose when it has cooled; it will soften just right when you add the sugar.
