To prepare a delicious apricot cake, we start by getting our necessary ingredients ready. We need 4 eggs, 200 g of sugar, 300 ml of milk, 1 packet of baking powder, 1-2 tablespoons of lemon juice or vinegar, and 400 g of flour. It is important to use fresh, ripe apricots to give our cake an intense flavor.

In a large bowl, we add the eggs and sugar. We mix at medium speed using a mixer until the mixture becomes a homogeneous and fluffy cream. It is essential that the sugar completely dissolves in the eggs, and the texture is airy. Then, we gradually add the milk, continuing to mix to well integrate the ingredients.

The next step is to prepare the baking powder. We activate it with lemon juice or vinegar, mixing quickly, then add it to the mixture. This step is crucial as it will give the cake that fluffy and airy texture. After integrating the baking powder, we start adding the flour little by little, mixing at a low speed. It is important not to overmix to avoid developing the gluten in the flour.

Once we have a homogeneous mixture, we move on to preparing the baking pan. Choose a medium-sized pan, which we grease with oil, ensuring that the entire surface is well covered. Then, we dust the pan with flour to prevent the cake from sticking. This step is essential to ensure that after baking, the cake will come out easily.

We carefully pour the mixture into the prepared pan, smoothing the surface with a spatula. Now, it is time to add the apricots. We slice the apricots thinly and arrange them nicely on top of the mixture, according to our preferences. They will not only add a sweet-sour taste but also an attractive look to our cake.

We preheat the oven to 180 degrees Celsius and place the pan with the cake inside. We let it bake for 20-25 minutes at moderate heat. It is important not to open the oven door in the first 15 minutes to allow the cake to rise evenly. When ready, the cake will have a golden crust, and a toothpick inserted in the middle will come out clean.

After we take it out of the oven, we let the cake cool in the pan for a few minutes, then we can transfer it to a rack to cool completely.
