 Ingredients: 250 g ricotta or cottage cheese, 250 g sugar, 3 eggs, 75 g bitter cocoa, 1 teaspoon baking powder, 100 g butter, 80 g flour, Glaze: 100 g dark chocolate.

Ricotta and cocoa cake is an iconic dessert of Italian cuisine, perfect for celebrating special moments, such as children's birthdays or to be enjoyed alongside a cup of milk coffee in the morning. To start, prepare the necessary ingredients. You will need 500 g of fresh ricotta, 200 g of sugar, 4 large eggs, 50 g of sifted cocoa, 150 g of flour, 1 packet of baking powder, and 100 g of butter, which you will melt and then cool. Make sure all ingredients are at room temperature to achieve a homogeneous mixture.

In a large bowl, add the ricotta and sugar, then mix well until you obtain a smooth and airy cream. It is important to pay attention to this step, as aerating the mixture will contribute to the fluffy texture of the cake. Add the eggs, one at a time, mixing well after each addition to ensure they are fully incorporated.

Once you have obtained a homogeneous cream, sift the cocoa and flour together with the baking powder, then gradually incorporate them into the ricotta mixture. Finally, add the melted and cooled butter, continuing to mix until everything becomes a light and smooth mousse-like cream.

Now, prepare the baking pan. Choose a pan with a diameter of 20 cm, line it with parchment paper, and grease it with butter to ensure that the cake will easily come out after baking. Preheat the oven to 180 degrees Celsius. Pour the mixture into the pan and level the surface with a spatula.

Bake the cake for about 30 minutes. It is essential not to open the oven in the first 20 minutes to allow the cake to rise evenly. After the time has expired, perform the toothpick test: if it comes out clean, the cake is ready. Once baked, remove the cake from the oven and let it cool completely in the pan.

To decorate it, melt 100 g of chocolate and glaze the cake with it. You can add colorful or silver sprinkles for a festive look or opt for decorations made of candied fruits or nuts. This ricotta and cocoa cake will surely be a hit, bringing joy to both children and adults. Enjoy it with pleasure!
