Pasta with Cream Cheese and Olive Paste

 Ingredients: paste olive paste from the tube (or a few pitted olives) creamy cheese preferably not salty sweet cream (meaning not like the sour one from Romania, but obviously without sugar in it: lol:) or richer milk basil leaves (or dried basil in the absence of green leaves)

In a bowl, cream the cheese well with 2-3 tablespoons of whole milk or cream until it becomes a smooth and homogeneous paste. If you don't have creamy cheese on hand, don't worry! You can use grated cheese on the small grater. This will not only add an interesting texture but also a note of originality to the dish. Once the cheese is ready, transfer everything to a hand blender or mini blender and blend until you achieve a smooth cream. It is essential to obtain a smooth consistency so that it blends perfectly with the pasta.

After you have obtained the cheese cream, add the tube of olive paste or, in its absence, a few pitted olives, which you will blend together with the cheese. This will add an intense and salty flavor, perfectly balanced for your dish. Add a little extra virgin olive oil and a few tablespoons of whole milk or cream, depending on the desired consistency. It is important that the cream is thicker than regular cream but still slightly runny.

Meanwhile, boil the pasta according to the instructions on the package. After they have boiled, drain them well and add two tablespoons of the water they boiled in to the cheese cream. This step will help create a creamier sauce. Mix well to achieve an even consistency. Add half of the spices you prepared earlier and a few fresh basil leaves for an extra flavor. Mix the pasta with the cheese cream, ensuring that each piece is well coated.

Once you have finished mixing, transfer the pasta to a bowl or serving platter. The remaining seasoning can be poured on top or served separately in a small bowl so that everyone can adjust the taste. Although the appearance may not be very attractive, the aroma and taste of this recipe are truly delightful. You can experiment with different types of cheese such as ricotta, Philadelphia, mascarpone, or even other finely grated white cheeses, adding a little milk or cream as needed.
