Pork Steak in Vienna Sauce

 Ingredients: -1 kg pork ribeye -1 onion -2/3 carrots -1 teaspoon sweet paprika -2/3 tablespoons tomato paste -water -semi-dry white wine -whole pepper -1 teaspoon thyme -1 teaspoon vegeta (single) -salt -ground pepper -oil

To prepare a delicious oven-baked meat with tomato sauce and wine, we will start by preparing the necessary ingredients. Make sure you have beef or pork, olive oil, salt, pepper, onion, carrot, sweet paprika, tomato paste, water, white wine, peppercorns, thyme, vegeta, and possibly some fresh herbs for decoration on hand.

In a deep pot, heat a little oil over medium heat. When the oil is well heated, add the meat cut into appropriately thick pieces. Sprinkle salt and pepper on both sides of the meat before placing it in the pan. Let the meat fry for a few minutes until it is lightly browned and changes color. This process will help develop flavors and achieve a pleasant texture. Once the meat is ready, remove it from the pan and keep it on a plate.

In the same pan, with the remaining oil, add the finely chopped onion and grated carrot. Mix well to distribute the flavors and let them sauté for about 5-7 minutes until the onion becomes translucent and the carrot slightly changes texture. Then, take the pot off the heat and add a teaspoon of sweet paprika, stirring constantly to avoid burning the spice. Put the pot back on the heat and quickly add the tomato paste, mixing well to combine all the ingredients.

After the sauce has homogenized, add the fried meat back into the pot. Immediately after that, pour in water and white wine, making sure the liquid covers the meat well. I used about 3 cups of water and 2 cups of wine, but you can adjust the quantities according to your preferences. Add the peppercorns, a little salt, a teaspoon of thyme, and vegeta. Let everything simmer covered over medium heat for about 40 minutes, or until the meat is tender and well cooked.

Once the meat is cooked, carefully remove it from the sauce and cut it into thicker slices, being careful to maintain its shape and juiciness. Arrange the slices of meat in another pot or on a platter. The remaining sauce in the pot should be blended to achieve a smooth consistency. After obtaining a homogeneous sauce, strain it to eliminate any larger vegetable pieces, achieving a velvety texture. Put the sauce back on the heat for another 5 minutes to thicken slightly.

When serving, pour the sauce over the slices of meat, decorating with fresh herbs such as parsley or dill for an extra splash of color and flavor. You can accompany this dish with mashed potatoes, rice, or sautéed vegetables, which will perfectly complement this savory dish. Enjoy your meal!
