The meat is beaten well with a meat mallet, taking care to achieve an even thickness so that it cooks properly in the oven. When the meat is ready and has developed a golden crust, take it out of the oven and let it rest for a few minutes. Serve the meat alongside the vegetable puree, decorated with fresh herbs to add a splash of color.
