Pasta with Potatoes I
Ingredients: 1 pack of Farfalle pasta (Piccolino) 6 potatoes or more 1 large onion salt pepper
To create a delicious dish, I started by boiling diced potatoes, as is usually done to achieve a creamy mash. It is important to choose quality potatoes, preferably floury ones, which cook evenly and become soft, contributing to the final texture of the dish. After the potatoes have boiled for about 10-15 minutes, being halfway done, I decided to boil the pasta. Choosing the type of pasta is essential; I prefer penne or fusilli, as they absorb flavors from sauces better.
In the meantime, I prepared the onion. I chopped it finely, making sure the pieces were uniform, so they would cook evenly. In a pan, I added a little olive oil and began to sauté the onion over medium heat. It is important to stir occasionally to avoid burning it. The onion will transform into a golden and translucent mixture, releasing enticing aromas that will enrich the final dish.
Once the pasta has boiled according to the package instructions, I drained it and combined it in a large bowl with the boiled potatoes and sautéed onion. I added freshly ground pepper, which adds a note of flavor intensity, but it is essential to adjust the amount according to personal preference. If you prefer a subtler taste, you can reduce the amount of pepper, but I recommend not skimping on the onion, as it is the key to a tasty dish.
After mixing the ingredients well, I served the dish warm, and the reactions of my loved ones were extraordinary. They seemed to enjoy every bite, as if they were tasting the best food in the world.
