Cake with White and Yellow Base

Yellow base: In a sufficiently large bowl, start by beating the egg yolks with the sugar until the mixture becomes creamy and frothy, and the sugar is completely dissolved. It is essential to use an electric mixer to achieve an even texture, but if you prefer, you can also use a wooden spatula, being careful to work enough to incorporate air. Once the mixture is well homogenized, add the vanilla essence and the grated lemon or orange zest, which will add extra flavor. At this point, pour the oil in a thin stream, mixing continuously to prevent the ingredients from separating.
After the oil is fully integrated, sift the flour together with the baking powder to avoid lumps. Mix with a spatula or a wooden spoon, being careful not to overwork the dough. The result should be a homogeneous and slightly thicker mixture. Pour the composition into the loaf pan, which has been lined with baking paper, ensuring that the dough is evenly distributed. For a nice appearance, sprinkle sifted cocoa on top, which will add not only an intense flavor but also an attractive visual note.
White base: In another bowl, beat the egg whites well with a mixer until they become a stiff and shiny foam. Gradually add the sugar, continuing to mix so that it integrates completely and helps stabilize the foam. Once the egg whites are firm, add the oil, mixing slowly not to lose the air in the composition. Sift the flour together with the baking powder and carefully incorporate them, mixing with a spatula to achieve a well-homogenized composition.
Pour the white base over the yellow one in the prepared pan, leveling it with a spatula to have an even surface. Place the pan in the preheated oven at 180 degrees Celsius and let it bake for about 30 minutes. It is recommended to check if it is baked using a toothpick; if it comes out clean, the cake is ready. After baking, remove the pan and let the cake cool on a rack.
Once cooled, cut it into slices and serve it plain or, for an elegant decoration, dusted with powdered sugar. This is a versatile dessert, perfect for any occasion, being just as delicious on its own as when accompanied by a scoop of ice cream or a fruit sauce.
