Apple and Walnut Cake
Ingredients: 4 eggs, 150 g sugar, 80 ml milk, 160 ml oil, 360 g flour, 3/4 packet baking powder, about 150-180 g ground walnuts, 2 apples, cinnamon, grated lemon zest
To create a delicious and aromatic dessert, we will start by preparing the basic ingredients. We carefully peel the apples, removing the skin and seeds, then cut them into small cubes, about 1-2 centimeters. These cubes will add a pleasant texture and a sweet-sour taste to our cake. After cutting them, we sprinkle a teaspoon of cinnamon over the apples to enhance their aroma and give them a warm and comforting flavor.
In a large bowl, we mix the four eggs with the sugar until we obtain a fluffy composition with an intense yellow color. This step is essential because aerating the eggs will contribute to the fluffy consistency of the cake. We continue the process by adding the milk and oil, mixing further to homogenize the ingredients. The oil will bring moisture, and the milk will enrich the flavor of the preparation.
After obtaining a uniform mixture, we add the grated lemon zest. This will provide a fresh fragrance and perfectly complement the sweetness of the apples. In another bowl, we mix the flour with the baking powder, and then incorporate this combination into the batter, gently mixing with a wooden spoon. It is important not to overmix, as this could develop the gluten in the flour, which might make the cake denser. Finally, we add the apple cubes and gently mix to distribute them evenly in the batter.
We prepare a 26 cm diameter baking pan, greasing it with a little butter and sprinkling flour to prevent the cake from sticking. We carefully pour half of the obtained mixture into the pan, ensuring it spreads evenly. Over this first layer, we sprinkle ground nuts, which will add a crunch and a delicious taste. Then, we cover with the remaining batter, being careful to distribute it evenly.
We place the pan in the preheated oven at 180°C and bake the cake for about 40-45 minutes. It is recommended to do the toothpick test to ensure it is fully baked; the toothpick should come out clean. Once the cake is ready, we let it cool slightly before cutting and enjoying it with loved ones.
