Cherry muffins (or any fruit)

Ingredients: -2 eggs -200 g sugar -200 ml oil -300 ml yogurt -1/2 teaspoon salt -juice and zest of one lemon -400 g flour -1 and 1/2 packets of baking powder -500 g cherries: from compote, or fresh, or frozen (which should be thawed and drained)

To prepare these delicious cherry muffins, we start by ensuring we have all the necessary ingredients at hand. It is important to use fresh eggs, granulated sugar, sunflower oil, salt, lemon zest, freshly squeezed lemon juice, yogurt, wheat flour, and baking powder. Also, make sure you have fresh cherries or canned ones available, depending on your preference.

The first step in preparing these muffins is to take a large bowl and add the eggs together with the sugar. Using an electric mixer, we mix the composition well until it doubles in volume and becomes frothy. This process is essential as it will help achieve fluffy and airy muffins. Once we have obtained a homogeneous texture, we begin to gradually add the oil while continuing to mix. It is important not to add the oil all at once, to allow the ingredients to integrate properly.

After incorporating the oil, we add a pinch of salt, the grated lemon zest, and the freshly squeezed lemon juice, which will add a fresh note to the composition. We continue to mix and enjoy the pleasant aroma that develops. Next comes the yogurt, which we add gradually, stirring constantly until we obtain a homogeneous mixture.

Finally, it is time to add the dry ingredients: flour and baking powder. The requirement is to sift them beforehand to avoid lumps. We mix with a spatula, being careful not to overwork the dough to keep the muffins fluffy. When we have obtained a uniform batter, we prepare to portion the composition into the muffin molds. We use a spoon to evenly distribute the batter, filling each cup about two-thirds full.

After filling the molds, we add a few cherries on top of each muffin to add a delicious taste and a touch of color. The oven should be preheated to 175 degrees Celsius, and the muffins bake for about 30 minutes. It is good to check the baking with a toothpick; if it comes out clean, the muffins are ready.

To achieve an attractive appearance, at the end, we dust the muffins with powdered sugar mixed with a little vanilla, giving them a sweet and aromatic finish. These muffins are perfect for serving as a snack, at a special occasion, or simply to treat yourself. In total, from this recipe, you will obtain about 20 muffins, perfect for enjoying with loved ones.
