Mutton stew and sheep sausages
Ingredients: (6 servings) Marinated lamb pastrama – 700 g Smoked sheep pastrama – 700 g Fresh sheep sausages – 1 piece approx. 30-40 cm Tomato juice – 250 ml Garlic – 6-7 cloves Oil – 2 tablespoons Red wine – 80 ml White pepper – to taste
Start your culinary adventure by preparing a delicious recipe for tochitura, a traditional Romanian dish full of flavors and taste. The first step is to heat a little oil in the aluminum pot of the Crock Pot 6 L, in Sauté mode. Here, you can add a few fresh sausages, which will develop a nice golden crust. After a few minutes of browning, add a little water on top and put the lid on, allowing condensation to form which will help cook the meat evenly. This step is essential to maintain the juiciness of the meat.
After a few minutes, remove the sausages and place them on a plate lined with paper towels to absorb the excess fat. Next, take the marinated mutton pastrama and the smoked sheep pastrama and cut them into appropriately sized cubes. These types of meat will add extra flavor to your dish. Chop the garlic finely, as this is the ingredient that will provide a note of intensity and character to the tochitura.
Put the meat cubes back into the aluminum pot of the Crock Pot and sauté them in a small amount of oil until they become slightly golden. Here, the climax approaches: add the chopped garlic and sauté them together for a few minutes, until the aroma of the garlic begins to release. Then, deglaze everything with a dry red wine, which will give the dish an unparalleled depth of flavor. After the wine partially evaporates, add freshly ground white pepper and tomato juice, to add a note of acidity and freshness.
Now, it's time to transfer the aluminum pot into the Crock Pot. Put the lid on and set the time to 2 hours and 30 minutes, choosing the "low" cooking program to allow the flavors to develop gradually. 15 minutes before the cooking process is complete, add the previously browned sausages to the pot and mix everything well, so that each ingredient blends harmoniously.
Once the cooking time is over, your dish is ready to be enjoyed! Serve the tochitura alongside a generous portion of steaming polenta, which will perfectly complement this rich and flavorful dish. Don't forget to add some pickles for a contrast of textures and flavors. Enjoy your meal!
