Clafoutis with plums
Ingredients: (8 servings) Plums - 200 g Eggs - 3 pcs Sugar - 50 g Flour - 100 g Milk - 250 ml Vanilla extract - 1 teaspoon Butter - 20 g Grated lemon zest - 1 teaspoon A pinch of salt
We start by preparing the ceramic pot of the 4.7 L Digital Crock Pot. Place a sheet of baking paper inside it to prevent the cake from sticking and to facilitate later cleaning. Now, let's move on to preparing the main ingredients. Wash the plums well and cut them into small cubes, making sure to remove any pits. Once done, evenly place them in the ceramic pot so that each piece of plum is well distributed.
In a large bowl, take a mixer and start beating the whole eggs. Gradually add the salt, which will enhance the sweet flavor of the cake. Continue by incorporating the sugar, mixing well until the mixture becomes frothy and a deep yellow. Now is the time to add the lemon zest, which will provide a fresh and citrusy aroma, and the vanilla extract, which will bring a touch of sweetness and complexity.
After all the ingredients are well mixed, pour in the milk and continue to mix. It is important to incorporate the flour gradually to avoid lumps. Keep mixing until you achieve a homogeneous batter, thinner than pancake batter but thick enough to lay over the plums.
Now that you have the mixture ready, carefully pour the batter over the plums in the ceramic pot. Make sure the batter evenly covers the fruits, which will ensure a well-cooked and flavorful cake. Place the lid on the Crock Pot and set it to 'high' cooking mode for 1 hour and 30 minutes.
Once the cooking time has expired, let the cake rest for about 15 minutes on the 'keep warm' or 'low' function to stabilize a bit. This step is essential to allow the flavors to develop and to achieve a perfect texture.
Once the cake has cooled, carefully remove it from the Crock Pot. Remove the baking paper and place the cake on a platter. Dust a generous layer of sugar over it, which will not only add an appealing look but will also bring an extra touch of sweetness.
The plum cake is now ready to be served. Cut it into portions and enjoy each slice. Bon appétit!
