To prepare a delicious chocolate cake with orange flavor, we start by beating the egg yolks with sugar and vanilla sugar. This step is essential, as we need to achieve a creamy composition that lightens slightly, a sign that the sugar has dissolved properly. Once we have achieved this, we gradually add the oil, continuing to mix to integrate the ingredients well.
The next step is to add, one by one and alternately, the milk, Nesquik, and the sifted flour together with the baking powder. It is important to mix well after each addition to obtain a dense but homogeneous composition. Finally, we add the chocolate cut into small pieces and, if desired, the grated orange peel, which will provide an extra flavor and freshness. We use a wooden spoon or a spatula to incorporate all these ingredients, being careful not to leave any traces of flour.
In another bowl, we beat the egg whites with a pinch of salt until we obtain a stiff and shiny foam. It is essential that these egg whites are well beaten, as they will help aerate the cake and give it a fluffy texture. After we have obtained the foam, we gradually add it over the yolk mixture, carefully homogenizing with a folding motion, from bottom to top, to preserve the air in the egg whites.
Now, we pour the resulting composition into a larger cake pan or into a tray lined with baking paper. It is important to choose a pan large enough, as the composition will double in volume during baking. We preheat the oven to 175 degrees Celsius and place the pan in the oven. We bake for 40-50 minutes, being careful not to open the oven door in the first 25 minutes to avoid dropping the temperature.
When the time is up, we check if the cake is baked by inserting a toothpick in the middle; if it comes out clean, the cake is ready. We let it cool slightly in the pan, then take it out onto a rack to cool completely. Finally, we can dust it with powdered sugar for an elegant look, or cover it with a chocolate glaze, which will add a delicious and attractive layer. This cake is perfect to be served alongside a cup of tea or coffee, bringing a touch of joy in every slice.
