Bean Cream with Mayonnaise

 Ingredients: canned beans, beef (usually I add tuna, but it turned out good with beef as well), salt, oregano, dill, parsley, pepper, onion (optional), mayonnaise

To prepare a delicious bean salad, we will start by boiling the beans. Choose white or red beans, which you will soak overnight to rehydrate and cook faster. After the soaking time has passed, rinse the beans under cold running water and place them in a large pot with cold water and a pinch of salt. Let the beans boil over medium heat until they become soft, but not so much that they fall apart. This process may take between 30 and 60 minutes, depending on the type of beans you are using.

In the meantime, we will prepare the mayonnaise. If you want to make it from scratch, you will need an egg yolk, a tablespoon of mustard, oil, and a little lemon juice. In a bowl, mix the yolk with the mustard and start gradually adding the oil, continuously stirring until the mixture becomes a thick emulsion. Add the lemon juice, salt, and pepper to taste. If you prefer, you can use store-bought mayonnaise to save time.

Once the beans are boiled, drain them and let them cool completely. This step is essential because adding mayonnaise to warm beans can lead to an unpleasant texture. After the beans have cooled, add the vegetable mix, which can include carrots, peppers, or olives, depending on your preferences. Mix the ingredients well so they combine perfectly, and the beans absorb the flavors.

After you have made this combination, add the mayonnaise you prepared earlier, carefully mixing to avoid crushing the beans. Now is the time to add the other ingredients, such as finely chopped red onion, bell pepper, or even freshly chopped parsley for an extra touch of freshness. Mix everything very well, ensuring that each ingredient is well incorporated.

Finally, the bean salad can be served with a garnish of finely chopped onion, which will add a spicy taste and a crunchy texture, or, if you prefer, with olives for a more elegant look.
