Yeast is the magic ingredient that will turn this recipe into a real delicacy, so we start by dissolving it in a cup of lukewarm water. It is important that the water is not too hot, as it will destroy the yeast, but lukewarm to activate fermentation. We add a tablespoon of flour and a teaspoon of sugar, mixing well to form a homogeneous paste. We let the mixture rise for about half an hour, until a beautiful foam forms on the surface. Alternatively, I prefer to incorporate the yeast directly into the warm milk, adding a tablespoon of flour, which helps achieve a finer texture.
Meanwhile, separate the egg yolks from the whites, and in a large bowl, pour in the rest of the flour, mixing with the activated yeast, warm milk, egg yolks, salt, and sugar. It is essential to knead the dough patiently for about fifteen minutes until it becomes elastic and homogeneous. Then, we add the melted and warm butter gradually, ensuring it incorporates well. If the dough seems too soft, do not hesitate to add a little extra flour. Once we achieve the desired consistency, we let the dough rise, covered with a clean towel, for 1-2 hours, until it doubles in volume.
While waiting for it to rise, we can prepare the filling. The cheese is well mixed with the eggs until it becomes a creamy and homogeneous mixture, which will add a delicious flavor to the pies. After the dough has risen nicely, we divide it into pieces the size of a golf ball. Grease a platter with butter to prevent the dough from sticking. Each piece of dough is rolled out on the platter to about the thickness of a finger and filled with a tablespoon of cheese. We lift the "edges" of the dough over the filling, sealing them well to prevent the cheese from escaping during baking.
Let the pies rest for half an hour to relax a bit. Meanwhile, grease a baking tray with butter and arrange the pies in it, making sure to leave a little space between them. Brush each pie with egg white to achieve a golden and appetizing crust. Preheat the oven to a moderate heat and, after placing the pies in the tray, bake them for about half an hour. You will be rewarded with an enticing aroma that will fill the entire kitchen!
