To prepare a delicious meal, we start by taking care of the main ingredients. In a deep plate, we soak a slice of bread in milk. This step is essential for obtaining a soft and flavorful filling. While the bread soaks, we focus on the chicken thighs. We place them between two plastic bags and pound them with a meat mallet, so they thin out a bit. Once the thighs are pounded, we season them evenly with salt to give them flavor.

Now, let’s focus on the filling for the thighs. We cut the slices of ham and sausage into small cubes, making sure they will be easy to mix. After we’ve drained the slice of bread well, we add it to the bowl with the ham and sausage. We continue by slicing the mushrooms thinly, which we will integrate into the mixture. We add a raw egg, which will bind all the ingredients together, and season with salt and pepper to taste. We also remember to add finely chopped parsley, which will provide an extra touch of freshness and aroma. We mix everything very well, so the ingredients combine perfectly.

In another step, we take care of the vegetables. We slice the carrots and onion into thin rings, and finely slice the garlic. We also cut the tomatoes, preparing them to be baked. In a tray, we put 150 ml of oil and place the sliced vegetables, sprinkling dried basil on top for an authentic Mediterranean taste.

Now, we return to the chicken thighs. On each pounded thigh, we place a slice of cheese, and then put 2 tablespoons of the previously prepared filling. We carefully roll them up and secure them with toothpicks, a simple trick if we don’t have string at hand. We place the stuffed thighs in the tray with vegetables, pouring 250 ml of white wine and 250 ml of water over them to add moisture and intensify the flavors.

We cover the tray with aluminum foil and place it in the preheated oven at 180 degrees Celsius, allowing it to bake for about 25 minutes. After this interval, we remove the foil and let the thighs brown nicely, becoming crispy on the outside. We serve this delicious dish alongside a side of mushroom rice, while the roasted vegetables from the tray, along with the sauce formed, perfectly complete the plate. This meal is not only nourishing but also full of flavors that will delight your taste buds.
